Step 1 — Prepare the green beans

  • Snap off the stem ends and pull off the coarse fibrous strings running along each side.
  • Slice the beans diagonally into short, pretty segments.

Step 2 — Prep the tomato and mushrooms

  • Remove the tomato core and cut into angled slices.
  • Slice the white mushrooms a little thicker, since they release water and become thin once cooked.

Step 3 — Sear the mushrooms

  • Heat a wok or pan with a splash of perilla oil over medium-high heat.
  • Add the mushroom slices first and sear until golden and fragrant — this is where the rich savoury base comes from.

Step 4 — Add beans and tomato

  • Toss in the green beans and tomato slices, then stir-fry quickly over high heat.

Step 5 — Season and finish

  • Drop the heat to low, then add the salt, white pepper, black peppercorns and canned corn.
  • Crank back to high heat and stir-fry vigorously, shaking the pan, until the tomato softens and blends into a glossy coating.

Step 6 — Serve

  • Keep tossing until the natural juices reduce and the beans are tender-crisp — no extra water needed.
  • Turn off the heat and serve hot over steamed rice or as a bright side dish.
