Tomato Stir-Fried Green Beans — 番茄炒敏豆

Ingredients
  

  • 300 g Green beans (敏豆 / 四季豆) trimmed and sliced diagonally
  • 2 Tomato (番茄) cored and sliced
  • 6-8 White mushrooms (白蘑菇) thickly sliced
  • 2 tsp Canned corn (玉米罐頭) for colour
  • as needed Perilla oil (紫蘇油) or any high-smoke-point oil
  • 1 tsp Salt (鹽)
  • 1/2 tsp White pepper (胡椒粉)
  • to taste Black peppercorns (黑胡椒粒) optional

Method
 

  1. Snap off the stem ends, pull off the coarse strings, and slice the green beans diagonally into short segments.
  2. Core the tomato and cut into angled slices. Slice the white mushrooms thicker, as they release water and thin out once cooked.
  3. Heat a wok or pan with a splash of perilla oil over medium-high heat. Add the mushroom slices and sear until golden and fragrant.
  4. Toss in the green beans and tomato slices, then stir-fry quickly over high heat.
  5. Drop the heat to low and add salt, white pepper, black peppercorns and canned corn. Crank back to high heat and stir-fry vigorously until the tomato softens and blends into a glossy coating.
  6. Keep tossing until the juices reduce and the beans are tender-crisp with no added water, then serve hot over rice.

Notes

Waterless cooking: tomato and mushrooms release enough moisture, so no added water is needed.
