Mapo Tofu (麻婆豆腐) is the undisputed king of Sichuan cuisine — a dish born in Chengdu in 1862 that has conquered tables worldwide. The magic lies in the “Mala” (numbing and spicy) flavor profile: Sichuan peppercorns create a tongue-tingling numbness that amplifies every other flavor, while doubanjiang (fermented broad bean paste) delivers deep, savoury complexity.

This vegan version doesn’t compromise. King oyster mushrooms are diced and pan-fried until golden and crispy, providing a chewy, meaty texture that mirrors minced pork. Silken tofu is blanched in salted water to firm it up slightly, allowing it to absorb the rich sauce without falling apart.

👨‍🍳 Instructions

Step 1: Prepare the Tofu

  • Drain the tofu. Place on cutting board, slice vertically in half, then lay flat. Cut into 2cm cubes.
  • Bring water to a boil with 1 tsp salt. Gently slide in the tofu cubes. After water returns to a boil (1-2 min), drain. This firms the tofu and helps it absorb sauce.

Step 2: Prep Aromatics and Mushrooms

  • Finely dice king oyster mushrooms into small cubes.
  • Mince garlic. Finely chop pickled red chilies. Separate green onion white and green parts.
  • Dry-roast Sichuan peppercorns in a wok over medium heat for about 5 min until fragrant and darkened. Grind to powder with mortar and pestle.

Step 3: Fry the Mushrooms

  • Heat wok over medium-high heat. Add 2 tbsp oil.
  • Add diced mushrooms and stir-fry constantly until golden brown and crispy, about 3-4 min.

Step 4: Build the Sauce

  • Reduce heat to medium. Add 1 tbsp doubanjiang, stir 15 sec.
  • Add garlic, pickled chilies, white parts of green onion. Toss until fragrant.
  • Add 1 tsp fermented black beans. Toss briefly.
  • Add 1 tbsp red chili powder. Stir to combine.
  • Pour in 1.5 cups water, turn heat to high, bring to a simmer.
  • Season with salt, MSG, 1/2 tbsp sugar, and 1 tbsp soy sauce.

Step 5: Simmer the Tofu

  • Gently slide tofu into sauce. Simmer 5 min over medium heat, pushing gently with back of spatula.

Step 6: Thicken and Serve

  • Mix 1 tbsp starch with 2 tbsp water for slurry. Turn heat to high.
  • Add half the slurry while gently tossing. When thickened, add remaining slurry. Toss until glossy.
  • Plate, sprinkle with ground Sichuan pepper, garnish with green onion. Serve with steamed rice.

💡 Tips and Substitutions

Problem Fix
Can’t find Pixian doubanjiang? Use any fermented bean paste or gochujang with soy sauce.
Tofu keeps breaking? Blanch in salted water first. Use gentle pushing, not stirring.
No king oyster mushrooms? Use finely diced shiitake or crumbled extra-firm tofu.
Want less spicy? Reduce pickled chilies to 1, omit chili powder. Keep Sichuan peppercorn.
Douchi too salty? Rinse fermented black beans before using.
