Frozen udon noodles (冷冻乌冬面) 250 g thick wheat noodles
Coconut cream (椰浆) 2 tbsp creamy finish
Tofu crumble (豆腐碎) 1/2 cup homemade, see video
Chili threads (辣椒丝) to serve garnish
White sesame seeds (白芝麻) to serve garnish

👨‍🍳 Instructions

Step 1

  • Bring a pot of water to a boil for the noodles.
  • Crush, peel, and finely chop the garlic. Finely chop the ginger and green onions, and dice the tomato.
  • In a small bowl, combine the gochujang, soy sauce, dark soy sauce, maple syrup, toasted sesame oil, and cayenne pepper to make the sauce.

Step 2

  • Heat a sauté pan over medium-low heat.
  • Add the avocado oil, then the garlic and ginger. Sauté for about 1 minute until fragrant.
  • Add the diced tomato and sauté for a couple of minutes until it softens.

Step 3

  • Once the water boils, cook the frozen udon noodles according to package instructions.
  • Drain and set aside when ready.

Step 4

  • Pour the prepared sauce into the sauté pan and stir in the coconut cream.
  • Turn the heat up to medium and cook for 2-3 minutes, stirring, until the sauce is glossy and thick enough to coat.
  • Drain the noodles, add them to the pan, and toss well.

Step 5

  • Add the tofu crumble and half the chopped green onions, and give the pan a good stir so everything is evenly coated.
  • Plate and garnish with the remaining green onions, chili threads, and white sesame seeds. Serve hot.

💡 Tips & Substitutions

Don’t have gochujang? Substitute 1 tbsp of any Korean chilli paste, or a mix of Sriracha and a little miso for fermented depth.
No tofu crumble on hand? Use pan-seared, crumbled firm tofu seasoned with a pinch of salt, or swap in crispy chickpeas.
Too spicy? Skip the cayenne and use half the maple syrup for a milder, still-balanced sauce.
Want it even creamier? Increase the coconut cream to 3 tbsp, or stir in a spoonful of plant-based yoghurt off the heat.
