The chickpea brownie (鹰嘴豆布朗尼 yīngzuǐdòu bùlángní) is one of the cleverest tricks in plant-based baking. Blended cooked chickpeas turn silky and dense, mimicking the fudgy crumb of a butter-laden brownie with zero dairy and zero eggs. The real sweetness comes from Medjool dates (椰枣 yēzǎo), which also act as the binder that holds every bar together.

Because there is no flour at all, these bars are naturally gluten-free, and the chickpea-and-peanut-butter base delivers a surprising amount of protein for a dessert. Roasting the chickpeas first is the one step you should never skip — it dries them out so the bars taste purely of chocolate, with none of that “beany” flavour.

Step 1: Soften the Dates

  • Soak the pitted Medjool dates in hot water until they turn soft and pliable.
  • Drain well and set aside — any pits should be removed now.

Step 2: Roast the Chickpeas

  • Drain and rinse the canned chickpeas thoroughly under cold water.
  • Spread them on a baking tray in a single layer and roast at 180°C (350°F) for 15 minutes.
  • This dries out excess moisture — the secret to a dense, non-beany brownie texture.

Step 3: Blend into a Dough

  • Add the roasted chickpeas, softened dates, cocoa powder, vanilla extract, and peanut butter to a food processor.
  • Blend until everything comes together into a thick, sticky dough that holds its shape when pressed.

Step 4: Press into the Pan

  • Line a loaf pan or rectangular container with baking paper.
  • Transfer the dough in and press down firmly and evenly until the surface is smooth and compact.

Step 5: Add the Chocolate Topping

  • Melt the dark chocolate gently over a double boiler (bain-marie) until glossy.
  • Pour it over the pressed base and spread it evenly to the edges.
  • Sprinkle with chopped pistachios while the chocolate is still wet.

Step 6: Chill and Slice

  • Refrigerate for at least 1 hour until the chocolate topping is fully set.

💡 Tips & Substitutions

No Medjool dates on hand? Use any soft dates and soak them longer. If the dough feels dry, add 1–2 tablespoons of maple syrup or plant milk to bring it together.
Peanut allergy? Swap the peanut butter for almond butter, tahini, or sunflower seed butter — the fudgy result stays the same.
Want it less sweet? Cut the dates to 180 g and use a higher-percentage dark chocolate (85%) for a deeper, more bitter cocoa note.
How do I store them? Keep in an airtight container in the fridge for up to 5 days, or freeze for up to a month — thaw 10 minutes before eating.
