Step 1: Prep the eggplant

  • Wash the eggplant and cut it into thick diagonal slabs, cutting almost through but leaving the bottom connected so each piece opens like a book.
  • Dust the inner cut surfaces lightly with a little dry cornstarch — this helps the stuffing cling and stay in place while cooking.

Step 2: Make the filling

  • Finely chop the oyster mushrooms. In a bowl, mash the soft tofu with a fork until creamy.
  • Add the chopped mushrooms, edamame, salt (or shiitake-kombu salt), white pepper, sugar, five-spice powder and cornstarch. Mix until well combined.
  • The cornstarch binds everything so the filling holds its shape when the eggplant is pan-fried.

Step 3: Stuff and pan-fry

  • Open each eggplant piece and press a spoonful of filling into the cut, letting it mound slightly.
  • Heat a little oil in a non-stick skillet over medium-low heat. Place the stuffed pieces filling-side down first.
  • Cook gently until the filling sets and turns golden, then flip to brown each side until the eggplant is tender, about 8–10 minutes total. Use medium-low heat so the thick filling cooks through without burning.

Step 4: Make the sauce

  • In a small bowl, stir together vegan oyster sauce, soy sauce, white pepper, sugar, salt and water.
  • Add a little cornstarch slurry to thicken it to a glossy, pourable sauce.

Step 5: Finish and serve

  • Pour the sauce over the warm stuffed eggplant and let it bubble briefly to coat each piece.
  • Garnish with white sesame seeds and serve hot with steamed rice. The sauce-soaked eggplant and creamy tofu filling are irresistible over a bowl of rice.

💡 Tips & Substitutions

Problem / Question Fix / Answer
My stuffing keeps falling out Don’t skip the cornstarch in the filling and press it firmly into the dusted eggplant cut. Pan-fry filling-side down first to set it before flipping.
No oyster mushrooms? Use any mushroom — shiitake or king oyster both work well and add great umami.
