🥘 Why This Recipe Works

Shanghai-style noodles (上海炒面) are all about chewy noodles, fresh vegetables, and sweet-savory sauce. This version uses frozen udon for incredible bounce and a satisfying chew. Dried shiitake mushrooms bring deep umami that transforms a simple noodle dish into something memorable.

10 ingredients, one pan, 15 minutes.

🛒 Ingredients

Frozen udon noodles (冷冻乌冬面) 250 g
Gai lan / Chinese broccoli (芥兰) 75 g stalks and leaves separated
Rehydrated shiitake mushrooms (干香菇) 4 soaked, sliced
Garlic (大蒜) 1 piece chopped
Green onions (青葱) 2 sticks chopped
Soy sauce (酱油) 1½ tbsp
Hoisin sauce (海鲜酱) 1 tbsp
Toasted sesame oil (芝麻油) 1 tsp
Avocado oil (牛油果油) drizzle or neutral oil

👨‍🍳 Instructions

Step 1: Prep

  • Bring a pot of water to a boil. Chop gai lan, separating leaves from stalks.
  • Chop garlic. Slice green onions. Remove shiitake stalks, thinly slice caps.

Step 2: Cook Noodles

  • Boil frozen udon for half the package time (1-2 min). Stir occasionally.
  • Mix sauce: soy sauce, hoisin, sesame oil. Set aside.
  • Drain noodles and set aside.

Step 3: Stir Fry

  • Heat oil in a pan over medium heat. Sauté gai lan stalks and garlic for 1 minute.
  • Add mushrooms and green onions. Sauté 2 more minutes.

Step 4: Finish

  • Add gai lan leaves, drained noodles, and sauce.
  • Toss and sauté 1-2 minutes until well-coated. Serve immediately.

💡 Tips & Substitutions

Can’t find gai lan? Substitute broccolini or regular broccoli (thinly slice stalks).
No frozen udon? Fresh or dried udon works too — cook to package instructions.
Want protein? Add pan-fried tofu or tempeh with the mushrooms.

          🌱 Why This Dish

Shanghai stir-fried noodles (上海炒面) embody the city’s practical, flavor-first culinary identity. Dried shiitake mushrooms are a hallmark of Chinese Buddhist vegetarian cooking, prized for their meat-like texture and umami depth (鲜味). It’s a reminder that plant-based eating doesn’t sacrifice richness — it finds it in unexpected places.
