👨🍳 Instructions
Step 1: Prep
- Bring a pot of water to a boil. Chop gai lan, separating leaves from stalks.
- Chop garlic. Slice green onions. Remove shiitake stalks, thinly slice caps.
Step 2: Cook Noodles
- Boil frozen udon for half the package time (1-2 min). Stir occasionally.
- Mix sauce: soy sauce, hoisin, sesame oil. Set aside.
- Drain noodles and set aside.
Step 3: Stir Fry
- Heat oil in a pan over medium heat. Sauté gai lan stalks and garlic for 1 minute.
- Add mushrooms and green onions. Sauté 2 more minutes.
Step 4: Finish
- Add gai lan leaves, drained noodles, and sauce.
- Toss and sauté 1-2 minutes until well-coated. Serve immediately.
