🥘 Why This Recipe Works

There’s something magical about corn tempura — the naturally sweet kernels burst in your mouth beneath a crisp, golden shell. At Japanese izakayas a few pieces can cost over a hundred dollars, but this version nails the same addictive crunch at home for a fraction of the price.

What makes it so good is the batter technique: a touch of low-gluten flour binds the corn while ice-cold water in the tempura mix keeps the coating shatter-crisp instead of dense and oily. The canned corn is already cooked, so all you’re doing is frying the batter to a perfect golden brown.

Four simple ingredients, one pot of oil, fifteen minutes — the sweetest, crunchiest snack you’ll make all week.

🛒 Ingredients

Ingredient Amount Notes
Canned corn (玉米罐頭) 1 can Drained of water
Low-gluten flour (低筋麵粉) ~2 tbsp For binding the kernels
Tempura batter mix (酥炸粉/天婦羅粉) ~1/2 cup Or all-purpose tempura flour
Ice water (冰塊水) ~1/3 cup Key for a crispy coating
Salt (鹽巴) a pinch Seasoning
Frying oil (油) enough to half-fry High smoke point
Pepper salt (胡椒鹽) to taste Classic finish
Dipping sauce (沾醬) optional Ketchup + mayo + mustard seeds

👨‍🍳 Instructions

Step 1: Prep the corn

  • Open the canned corn and drain the water completely.
  • Transfer the drained corn to a mixing bowl.
  • Add a little low-gluten flour and a pinch of salt to help bind the kernels.

Step 2: Make the crispy batter

  • In a separate bowl, add the tempura flour or batter mix.
  • Stir in ice-cold water a little at a time.
  • The ice water is the secret — it keeps the coating shatter-crisp and light.

Step 3: Combine

  • Fold the prepared batter into the seasoned corn.
  • Mix until every kernel is evenly coated in a thin batter layer.
  • You’re now ready to fry.

Step 4: Fry until golden

  • Heat oil in a pan to about 170°C (350°F).
  • Test with a wooden chopstick — when dense bubbles form around it, it’s ready.

Step 5: Half-fry the corn

  • Spoon the battered corn in small portions into the oil.
  • Use a half-fry (shallow) method at home so you don’t need lots of oil.
  • Since the corn is already cooked, just fry until the batter is golden and crisp.

Step 6: Crisp up and serve

  • Cook until the pieces feel firm when lifted and turn golden brown.
  • The corn edges will take on a slight toasty color.
  • Drain, sprinkle with pepper salt, and serve with your favorite dip.

💡 Tips & Substitutions

Problem / Question Fix / Answer
Batter too thick or heavy? Add a little more ice water for a thinner, crispier coat.
No tempura flour on hand? Use plain low-gluten flour plus a pinch of baking powder mixed with cold water.
How to check oil temperature? Dip a wooden chopstick — if dense bubbles gather around it, it’s ~170°C.
A simple dipping sauce? Mix ketchup, vegan mayonnaise, and a little mustard seed paste for a tangy dip.

🌱 Why This Dish

Tempura arrived in Japan via Portuguese missionaries in the 16th century, and 天婦羅 (tempura) eventually became a beloved izakaya snack — the word itself comes from the Portuguese “tempora,” the fasting days when seafood and vegetables were fried in light batter. Vegan tempura carries this tradition beautifully: no meat needed, just fresh vegetables and a cloud of crisp batter.

The name 玉米天婦羅 (yùmǐ tiānfùluó) simply combines 玉米 (corn) with 天婦羅 (tempura). In Buddhist temple cooking, gentle frying of vegetables has long been a way to honor and celebrate the natural sweetness of humble ingredients.

In Taiwan, where Veggie Deer is based, you’ll find these crispy fritters at night markets, on festive tables (especially around the Mid-Autumn Festival), and as a beloved snack that kids can’t resist.
