Ingredients
  

Garlic (大蒜)
Green onion (青蔥)
Carrot (紅蘿蔔)
Cabbage (高麗菜)
Shiitake mushrooms (香菇)
Soy sauce (醬油)
Dark soy sauce (老抽)
Black vinegar (黑醋)
Plant-based oyster sauce (素蠔油)
Hoisin sauce (海鮮醬)
Toasted sesame oil (香油)
Chili oil (辣椒油)
Frozen udon noodles (冷凍烏龍麵)
Avocado oil (酪梨油)
Bean sprouts (豆芽)
White sesame seeds (白芝麻)

Method
 

Prep the vegetables
  1. Thinly slice the garlic. Chop the green onions into bite-sized batons and the carrot into thin matchsticks. Shred the cabbage and slice the shiitake mushrooms.
Make the sauce
  1. In a small bowl, combine the soy sauce, dark soy sauce, black vinegar, plant-based oyster sauce, hoisin sauce, toasted sesame oil, and chili oil. Stir until the hoisin dissolves into a glossy, pourable sauce and set aside.
Cook the noodles
  1. Bring a pot of water to a boil and cook the frozen udon noodles for 1 minute less than the package instructions. Rinse under cold water, drain well, and set aside — the final toss in the pan finishes cooking them.
Stir-fry everything
  1. Heat a sauté pan over medium heat. Add the avocado oil, then the shiitakes and garlic, and sauté for a couple of minutes until fragrant. Add the green onions and sauté for another couple of minutes. Add the cabbage and carrot and sauté for 3-4 minutes until tender-crisp. Add the bean sprouts, noodles, and sauce, and toss well to coat every strand.
Serve
  1. Plate the noodles and sprinkle with white sesame seeds. Serve hot.

Notes

The sauce is the star — dark soy gives the glossy color, black vinegar adds brightness, and hoisin plus mushroom oyster sauce deliver deep umami. Under-cook the noodles by 1 minute so they stay springy after the final toss.
