Yellow Fungus Pumpkin & Chestnut Sweet Soup — 黃耳南瓜栗子糖水

Ingredients
  

  • 1 piece Dried yellow fungus 黃耳 soaked until soft, base trimmed
  • 12 Chestnuts 栗子 peeled
  • 200 g Pumpkin 南瓜 bite-size chunks
  • 4 Sweet jujube dates 椰棗 fruity sweetness
  • 5 Red dates 紅棗 pitted
  • 2 slices Ginger 薑
  • 1200-1500 ml Water 水 to taste

Method
 

  1. Soak the dried yellow fungus in cold water for several hours or overnight until plump and soft. Drain, trim the woody base, and tear into bite-size florets.
  2. Peel the chestnuts (simmer in boiling water briefly to loosen skins if fresh). Cut pumpkin into even bite-size chunks. Pit the red dates and rinse the sweet jujube dates.
  3. Bring the water with the ginger slices to a gentle boil, then add the yellow fungus, chestnuts and pumpkin and return to a simmer.
  4. Add the red dates and sweet jujube dates, lower the heat to a steady soft bubble, and simmer uncovered for about 40 minutes, skimming any foam, until the fungus is silky and the broth glossy.
  5. Sweeten to taste with rock sugar if desired, then ladle into warm bowls and enjoy hot, or chill and serve cold.

Notes

A silky Cantonese tonic dessert. Simmer gently for the glossiest texture; scale the water to your preferred thickness.
