Waterless Braised Cabbage & Tofu (無水高麗菜燜豆腐)

Ingredients
  

  • ½ head (~500 g) Cabbage (高麗菜) cut into wide strips; washed leaves supply the liquid
  • 1 block (400 g) Firm tofu (板豆腐) sliced ~1 cm thick
  • 5 Baby corn (玉米筍) cut diagonally
  • 5 Oyster mushrooms (秀珍菇) torn into small pieces
  • 2–3 tbsp Cooking oil (食用油) for pan-frying the tofu
  • 1 tbsp Soy sauce (醬油) marinade
  • 1 tsp Vegan oyster sauce (素蠔油) marinade
  • 1 tsp Five-spice powder (五香粉) marinade — the signature aroma
  • ½ tsp Salt (鹽) ¼ tsp marinade + ¼ tsp for the vegetables
  • ½ tsp Sugar (糖) marinade
  • ½ tsp White pepper (白胡椒粉) for the vegetables

Method
 

  1. Cut the cabbage half into wide strips, about 3–4 cm across. Wash thoroughly and shake off the excess water, but do not dry the leaves completely — that lingering moisture is your braising liquid.
  2. Slice the block in half lengthwise, then cut each half into even 1 cm slices. In a large bowl, combine 1 tbsp soy sauce, 1 tsp vegan oyster sauce, 1 tsp five-spice powder, ¼ tsp salt, and ½ tsp sugar. Coat every tofu slice and let it rest for 5–10 minutes.
  3. Cut 5 baby corn diagonally into bite-size pieces. Rinse 5 oyster mushrooms (check for sawdust), then tear them into small pieces.
  4. Heat a generous splash of oil in a wide pan over medium heat. Fry the tofu slices about 1½ minutes per side until deep golden brown, then remove and set aside.
  5. Keep a little frying oil in the pan and stir-fry the mushrooms and baby corn briefly over medium heat. Season with ¼ tsp salt and ½ tsp white pepper, then turn the heat to low. Spread the cabbage over the vegetables, lay the fried tofu on top, cover, and braise over medium-low heat about 5 minutes until the cabbage is soft but still bright green. Serve straight from the pan over steamed rice.

Notes

Waterless braising relies on the moisture inside the vegetables — no stock, no extra water. Keep the lid on and let the cabbage do the work.
