Tomato Fried Tofu Skin — 番茄炒豆包

Ingredients
  

  • 3 sheets Tofu skin (豆包) Cut into squares
  • 1 large Tomato (番茄) Ripe
  • handful Baby corn (玉米筍) Golden
  • handful Oyster mushroom (秀珍菇) Torn into strips
  • handful Edamame (毛豆) Sweet green soybeans
  • 1 tsp Toon sauce (香椿醬) Chinese toon, optional swap
  • 1 tbsp Ketchup (番茄醬) Deepens sweet-sour
  • 1 tsp Salt (鹽)
  • 1 tsp Sugar (糖)
  • 60 ml Water (水)
  • 2 tbsp Cooking oil (食用油) For pan-frying

Method
 

  1. Cut 3 sheets of tofu skin into square pieces (each yields ~6). Remove the tomato core and cut into rough chunks. Tear the oyster mushrooms into thin strips.
  2. Heat oil in a wok over medium heat and lay in the tofu skin. Fry until one side is golden and blistered, flip, and keep it tender (don't crisp too hard).
  3. Add the tomato chunks, baby corn, and mushroom strips. Season with 1 tsp salt and 1 tsp sugar, tossing — the salt helps the tomatoes release their juices.
  4. Add 1 tsp toon sauce (香椿醬), the edamame, 1 tbsp ketchup, and 60 ml water. Stir to combine.
  5. Cover and simmer on medium-low ~3 minutes until the flavors meld. Turn heat to high, toss once, remove from heat, and plate over steamed rice.
