Ingredients
  

  • 2 blocks ~400 g Firm tofu (板豆腐) cut into 1.5 cm cubes
  • 300 g Chestnut pumpkin (栗子南瓜) peeled, small dice
  • 2 tbsp Frozen edamame (冷凍毛豆) straight from freezer
  • 2 tbsp Corn kernels (玉米粒) canned, drained
  • 2 tbsp Neutral oil (食用油) for pan-frying
  • 1 tsp Kombu salt (昆布鹽) or sea salt + kelp powder
  • 1/2 tsp Ground white pepper (白胡椒粉)
  • 1 pinch Dried oregano (俄力岡粉)
  • 1 tsp Soy sauce (醬油)
  • 1 splash Water (清水)
  • to taste Fresh chili rings (辣椒圈) optional, for heat

Method
 

  1. Pat the tofu dry and cut into neat 1.5 cm cubes. Peel the pumpkin, slice into thick batons, then dice into small cubes. Measure about 2 tbsp each of frozen edamame and drained corn kernels.
  2. Heat 2 tbsp oil in a wide pan over medium heat and add the tofu in a single layer. Fry about 1 minute per side until golden and set, so the cubes hold their shape.
  3. Add the diced pumpkin and toss over the heat until the edges caramelize and turn golden — this browning is where the sweetness comes from.
  4. Toss in the corn and edamame, and lower the heat. Season with 1 tsp kombu salt, 1/2 tsp white pepper, and a pinch of oregano, then raise the heat and toss until every cube is coated.
  5. Add a splash of water so the pumpkin steams silky-soft and the edamame thaws; let the liquid cook off. Stir in 1 tsp soy sauce and toss until glossy and fragrant. Serve hot over rice, with fresh chili rings if desired.

Notes

Use frozen edamame straight from the freezer — it thaws in the pan. Chestnut pumpkin (栗子南瓜) has dense, sweet flesh; regular pumpkin works with a slightly longer cook. 100% plant-based.
