Taiwanese Shacha Stir-Fried Water Spinach — 沙茶炒空心菜

Ingredients
  

  • 1 bunch Water spinach, trimmed (空心菜) washed, 3-inch pieces
  • 6-8 pieces Baby corn (玉米筍) halved lengthwise
  • 5 Oyster mushrooms (秀珍菇) torn into strips
  • ~60g Vegan three-layer meat (素三層肉) optional, frozen-sliced
  • 2 tbsp Cooking oil (食用油) neutral
  • 1 tsp Vegan shacha sauce (素沙茶醬) check vegetarian label
  • 1 tsp Soy sauce (醬油) light
  • 50 ml Water (清水)

Method
 

  1. Rinse the water spinach and shake off excess water; cut into lengths keeping tender stems. Halve baby corn lengthwise and tear oyster mushrooms into thin strips. If using vegan three-layer meat, slice thinly straight from the freezer.
  2. Heat oil in a wok over high heat until shimmering. Add the sliced vegan three-layer meat and pan-fry until fragrant and lightly golden. Add oyster mushrooms and fry until golden and nutty.
  3. Toss in the baby corn and stir-fry a few seconds to warm through. Add the water spinach and toss everything together over high flame.
  4. Add 1 tsp shacha sauce, 1 tsp soy sauce, and 50 ml water. Stir-fry quickly, about a minute, until the greens just collapse and turn bright green. Spoon onto a plate immediately; do not let it sit in the hot wok.
