Stir-Fried White Tofu with Green Peppers — 白玉豆干炒青椒

Ingredients
  

  • 4 slices White dried tofu (白玉豆干) Non-GMO if available, sliced thin
  • 1 large Green bell pepper (青椒) Seeded, sliced diagonally
  • 3 stalks Baby corn (玉米筍) Sliced diagonally
  • 4 pieces Oyster mushrooms (秀珍菇) Torn into strips
  • 2 tbsp Cooking oil (食用油) Neutral oil
  • to taste Black peppercorns (黑胡椒粒) Ground over tofu while frying
  • 1/2 tsp Salt (鹽)
  • 1/4 tsp White pepper (白胡椒粉)
  • 1 tsp Shacha sauce (沙茶醬) Taiwanese satay sauce
  • 30 ml Water (水) Just enough to soften vegetables

Method
 

  1. Slice white dried tofu into thin rounds (about 0.5 cm). Seed and slice the green pepper into long diagonal strips. Slice baby corn diagonally and tear oyster mushrooms into thin strips.
  2. Heat oil over medium-high heat. Toss the mushrooms until fragrant and lightly golden. Add the tofu in a single layer and sprinkle black pepper straight over it — the heat bakes the aroma in. After about 2 minutes, flip and fry until light golden; stop before dark brown so the tofu stays springy.
  3. Lower to medium-low, add the green pepper strips, and season with salt, white pepper, and shacha sauce. Turn the heat back up to high and toss quickly so every piece is coated.
  4. Add the baby corn and about 30 ml of water. Toss until the water evaporates and the vegetables are tender-crisp, lifting from the bottom with the spatula so the tofu doesn't break. Serve hot over steamed rice.
