Stir-Fried Okra with Wood Ear Mushrooms — 秋葵炒黑木耳

Ingredients
  

  • ~1/2 box Fresh okra 秋葵 trimmed, sliced on diagonal
  • 1 piece Wood ear mushrooms 黑木耳 sliced thin
  • a few stalks Corn shoots 玉米筍 sliced diagonally
  • 1 piece Fresh shiitake 鮮香菇 sliced
  • to coat Cooking oil 食用油
  • 1 tsp Ground turmeric 薑黃粉
  • 1 tsp Salt 鹽
  • 1/4 tsp White pepper 胡椒粉
  • 60 cc Water 水 to steam-fry
  • to taste Chili rings 辣椒圈 (optional) omit for kids

Method
 

  1. Wash the okra and trim off the stem ends. Slice diagonally into bite-size pieces. Trim the dry tip of the corn shoots and slice diagonally; slice the wood ear into thin strips; slice the fresh shiitake.
  2. Heat a little oil over medium heat. Add shiitake slices first and fry until fragrant.
  3. Add okra, corn shoots, and wood ear. Let them sear briefly, then toss.
  4. Sprinkle in 1 tsp turmeric, 1 tsp salt, and 1/4 tsp white pepper. Stir quickly to coat evenly.
  5. Pour in about 60 cc of water and turn heat to high. Toss rapidly until liquid evaporates and okra is tender. Optional: add chili rings.
  6. Turn off the heat, transfer to a plate, and enjoy warm over rice.

Notes

Quick, budget-friendly vegetable stir-fry. Add chili rings at the end if you like heat — omit them for kids.
