Stir-fried Bean Curd Rolls with Okra — 豆腸炒秋葵

Ingredients
  

  • 1 strip Fried bean curd roll 豆腸 sliced into segments
  • 1 King oyster mushroom 杏鮑菇 hand-torn into shreds
  • 6-7 Okra 秋葵 sliced
  • 3 Baby corn 玉米筍 halved
  • 1/4 Red bell pepper 紅甜椒 sliced
  • to taste Cooking oil 食用油
  • 1 tsp Salt 鹽
  • 1/2 tsp White pepper 白胡椒粉
  • 1/4 tsp Curry powder 咖哩粉
  • 30 ml Water 水

Method
 

  1. Slice the fried bean curd roll into bite-size segments. Slice the okra on a slight diagonal and halve the baby corn. Slice the red bell pepper into thin strips and set aside.
  2. Separate the king oyster mushroom into thin shreds by hand pull. Torn edges brown faster and release far more aroma than clean slices.
  3. Heat oil in a wok over medium-high heat. Add the mushroom shreds and stir-fry until golden and fragrant to build the base flavor.
  4. Tip in the bean curd rolls, okra, baby corn, and red bell pepper. Toss quickly so everything is coated in the golden mushroom oil.
  5. Add salt, white pepper, and curry powder, tossing to distribute. Pour in 30 ml water and stir briefly so the okra softens.
  6. Turn the flame up and toss fast so the curry aroma melds with the vegetables. Transfer to a plate and serve immediately with steamed rice.

Notes

If you want more heat, add a sliced fresh chili with the red bell pepper. Serve over steamed rice.
