Stir-Fried Asparagus with White Beech Mushroom & Baby Corn — 清炒蘆筍

Ingredients
  

  • 2 bundles Asparagus 蘆筍 Trim dry ends; peel thicker bases
  • 1/4 pack White beech mushrooms 雪白菇 Trim root base, separate gently
  • 5 Baby corn 玉米筍 Sliced diagonally
  • 1/3 carrot Carrot 紅蘿蔔 Peeled, thin matchsticks
  • 1 tsp Salt 鹽 Or to taste
  • 1/2 tsp White pepper 白胡椒粉 Or to taste
  • 60 c.c. Water 水 Added along the wok edge
  • to taste Oil 食用油 Neutral high-heat oil

Method
 

Prepare the asparagus
  1. Trim the dry, woody bottom ends of the asparagus before unwrapping the bundle. Wash well. If any stalks are thick, lightly peel the lower section to remove tough fiber.
  2. Line up the stalks and cut on a slant into pieces about two finger-joints long (approx. 4-5 cm).
Prep the rest
  1. Trim the root base of the white beech mushrooms and split the clump in half, keeping small bunches.
  2. Cut the baby corn diagonally into thin slices. Peel the carrot, slice a small section, then cut into thin matchsticks to match the asparagus size.
Sear the mushrooms and carrot
  1. Heat oil in a wok over high heat. Add the white beech mushrooms and sauté until golden and fragrant.
  2. Add the carrot and stir-fry until it softens slightly (children love it once tender).
Fast-fry the corn and asparagus
  1. Add the baby corn and toss briefly. Add the asparagus and season with salt and white pepper.
  2. Stir-fry quickly over high heat so the color turns vivid green.
Steam through and finish
  1. Splash 60 c.c. of water along the edge of the wok. Keep tossing over high heat until the water reduces and the asparagus is just tender.
  2. Turn off the heat and plate immediately while still vibrant and crisp.
