Pineapple Fried Rice — 鳳梨炒飯

Ingredients
  

For the Tofu Scramble
  • 200 g Firm tofu 老豆腐
  • ½ tbsp Cooking oil 食油 for the scramble
  • ¼ tsp Black salt 黑盐
  • ½ tsp Garlic powder 蒜粉
  • ¼ tsp Turmeric 姜黄
For the Fried Rice
  • 200 g Pineapple chunks 菠萝块
  • 450 g Cooked rice 白饭 day-old
  • 60 g Cashew nuts 腰果 roasted
  • 50 g Green peas 豌豆
  • 80 g Onion 洋葱 diced
  • 80 g Carrot 胡萝卜 diced
  • 150 g Tomatoes 番茄 diced
  • 3 cloves Garlic 蒜头 minced
  • 1 tsp Ginger 姜 minced
  • 20 g Spring onion 葱 white + green
  • 1 tbsp Cooking oil 食油
  • 1½ tsp Curry powder 咖喱粉
  • 1 tsp Chilli powder 辣椒粉
  • 1 tbsp Nutritional yeast 营养酵母
  • ⅓ tsp Salt 盐
  • ¼ tsp White pepper 白胡椒
  • 1 tbsp Soy sauce 酱油
  • ½ tbsp Vegan fish sauce 素鱼露

Method
 

Scramble the tofu
  1. Warm ½ tbsp oil in a wok; add the white spring onion and firm tofu. Stir-fry while pressing the tofu into fine crumbles. Season with black salt, garlic powder and turmeric; cook until golden, then set aside.
Sauté the aromatics
  1. Heat the remaining 1 tbsp oil over medium heat. Add onion and sauté 2–3 minutes until softened. Add garlic, ginger and carrot; sauté 5–6 minutes until the carrot is tender.
Sweet-sour base
  1. Add pineapple chunks and tomatoes. Sauté 4–5 minutes until the pineapple is lightly browned and its juices release.
Rice, peas and seasoning
  1. Add the cooked rice and peas; toss to combine. Season with curry powder, chilli powder, nutritional yeast, salt, white pepper and soy sauce. Stir-fry 4–5 minutes until everything is hot and evenly coated.
Finish and serve
  1. Fold in the scrambled tofu and roasted cashews. Drizzle in the vegan fish sauce and toss once more. Garnish with the green spring onion and serve hot.

Notes

A festive sweet-sour fried rice. Use day-old rice for the best fluffy, non-sticky texture.
