Pan-Fried Shredded Potato Pancakes — 香煎馬鈴薯絲餅

Ingredients
  

  • 2 medium Potatoes 馬鈴薯 (about 350 g) peeled and julienned
  • ½ Yellow bell pepper 黃甜椒 deseeded, thinly sliced
  • ¼ piece Zucchini 櫛瓜 thinly sliced and julienned
  • 1 tsp Salt 鹽
  • ½ tsp White pepper powder 胡椒粉
  • ¼ tsp Coarse black pepper 粗粒黑胡椒
  • to taste Dried oregano 奧勒岡粉 fragrant Italian herb
  • about 3 tbsp Coarse sweet potato starch 粗顆粒地瓜粉 binder; start with 2 tbsp
  • as needed Cooking oil 食用油 for pan-frying
  • to serve Ketchup 番茄醬 optional, kids love it

Method
 

  1. Slice peeled potatoes paper-thin, stack and julienne into fine shreds. Deseed half a yellow bell pepper and slice thin strips. Slice a quarter zucchini and cut into fine shreds. Place all in a large bowl.
  2. Add 1 tsp salt, ½ tsp white pepper, ¼ tsp coarse black pepper and oregano to taste. Add 2 tbsp coarse sweet potato starch and toss with your hands; the surface moisture helps it stick. If too loose to hold shape, add another tablespoon.
  3. Take a handful and press it firmly into a compact flat patty so it holds together while frying. Place into an oiled pan over medium-high heat.
  4. Fry over medium-high heat until the bottom sets golden brown, then flip. Lower to medium-low so the outside doesn't scorch, press gently, and cook until golden on both sides.
  5. Serve hot with ketchup, as breakfast, an afternoon snack, or over rice.

Notes

No flour, no eggs — the shredded potato binds with its own starch plus a little sweet potato starch. Press patties firmly and don't flip too early.
