Korean Style Pan Noodles — 韩式炒乌冬面

Ingredients
  

  • 2 pieces garlic (蒜) finely chopped
  • 1 small piece fresh ginger (姜) finely chopped
  • 2 sticks green onion (青葱) chopped, divided
  • 1 tomato (番茄) diced
  • 1 tbsp gochujang (韩式辣椒酱) Korean chilli paste
  • 1/2 tbsp soy sauce (生抽) light soy sauce
  • 1 tsp dark soy sauce (老抽) for colour
  • 1/2 tbsp maple syrup (枫糖浆) to balance heat
  • 1/2 tsp toasted sesame oil (熟芝麻油) aromatic finish
  • 1 pinch cayenne pepper (辣椒粉) for extra heat
  • 1 tsp avocado oil (牛油果油) for sautéing
  • 250 g frozen udon noodles (冷冻乌冬面) thick wheat noodles
  • 2 tbsp coconut cream (椰浆) creamy finish
  • 1/2 cup tofu crumble (豆腐碎) homemade
  • to serve chili threads (辣椒丝) garnish
  • to serve white sesame seeds (白芝麻) garnish

Method
 

  1. Bring a pot of water to a boil for the noodles. Crush, peel, and finely chop the garlic. Finely chop the ginger and green onions, and dice the tomato.
  2. In a small bowl, combine the gochujang, soy sauce, dark soy sauce, maple syrup, toasted sesame oil, and cayenne pepper.
  3. Heat a sauté pan over medium-low heat. Add the avocado oil, then the garlic and ginger, and sauté for about 1 minute until fragrant. Add the diced tomato and sauté for a couple of minutes until it softens.
  4. Once the water boils, cook the frozen udon noodles according to package instructions, then drain and set aside.
  5. Pour the prepared sauce into the pan and stir in the coconut cream. Turn the heat up to medium and cook for 2-3 minutes, stirring, until glossy.
  6. Add the drained noodles to the pan and toss well. Add the tofu crumble and half the green onions, stir to coat, then plate and garnish with the remaining green onions, chili threads, and white sesame seeds.
