Indonesian XO Sauce Vegan Scallops with Stink Beans — 印尼XO醬素帶子炒臭豆

Ingredients
  

King oyster mushrooms (杏鮑菇)
Stink beans / petai (臭豆)
Dried shiitake mushrooms (乾冬菇)
Fresh red chili (紅辣椒)
Garlic (蒜頭)
Shallots (乾蔥)
Light soy sauce (生抽)
Dark soy sauce (老抽)
Sugar (糖)
White pepper (白胡椒粉)
Cooking oil (食用油)
Cornstarch slurry (生粉水)

Method
 

Prepare Vegan Scallops
  1. Clean king oyster mushrooms and slice into 2cm-thick rounds. Score a shallow crosshatch pattern on one side. Lightly season with salt and white pepper.
Make XO Sauce
  1. Drain soaked shiitake (reserve liquid) and finely chop. Heat 2 tbsp oil in a wok over medium heat. Fry shiitake, garlic, chili, and shallots for 3-4 minutes until fragrant. Add 1 tbsp soy sauce and 1/2 tsp sugar. Set half aside.
Sear Scallops
  1. Wipe wok clean, add 1 tbsp oil over high heat. Sear mushroom rounds for 2 minutes per side until golden. Remove and set aside.
Stir-fry Stink Beans
  1. Add remaining XO sauce to wok. Toss in stink beans and stir-fry for 2 minutes. Add 2-3 tbsp reserved mushroom water to create steam.
Combine
  1. Return mushroom scallops to wok. Add remaining soy sauce, sugar, and white pepper. Pour in cornstarch slurry and stir until sauce thickens.
Serve
  1. Transfer to plate. Garnish with sliced chili or cilantro. Serve immediately with steamed jasmine rice.

Notes

Serve immediately for best texture. The XO sauce can be made ahead and refrigerated for up to a week.
