Indonesian Satay Sauce Braised Vegetables — 印尼沙嗲醬燉時蔬

Ingredients
  

  • 250 g Broccoli florets (西蘭花)
  • 200 g Cauliflower florets (椰菜花)
  • 1 large Carrot, sliced (甘筍)
  • 6 Baby corn, halved (粟米芯)
  • 100 g Sugar snap peas (荷蘭豆)
  • 1 Red bell pepper (紅椒)
  • 50 g Wood ear mushrooms, soaked (云耳)
  • 150 g Tofu puffs (炸豆腐卜)
  • 3 cloves Garlic, minced (蒜蓉)
  • 2 Shallots, sliced (乾蔥)
  • 1 Red chili, sliced (指天椒, optional)
  • 2 tbsp Peanut butter, smooth (花生醬)
  • 1 tbsp Miso or fermented soybean paste (味噌)
  • 250 ml Coconut milk (椰漿)
  • 1 tbsp Soy sauce (生抽)
  • 1 tsp Curry powder (咖喱粉)
  • 1 tbsp Coconut sugar (椰糖)
  • 200 ml Vegetable stock (素高湯)
  • 1 tbsp Neutral cooking oil (食用油)

Method
 

  1. Cut the broccoli and cauliflower into bite-size florets. Slice the carrot and red bell pepper, halve the baby corn, and trim the sugar snap peas. Soak the wood ear mushrooms until soft, then slice; rinse the tofu puffs in warm water to remove excess oil.
  2. In a small bowl, whisk the peanut butter, miso, soy sauce, coconut sugar, curry powder and half the coconut milk into a smooth paste. Stir in the remaining coconut milk along with the vegetable stock, and set aside.
  3. Heat the oil in a wide pan over medium heat and sauté the shallots until translucent, about 2 minutes. Add the garlic and chili, stirring for 30 seconds until fragrant but not browned.
  4. Pour the satay sauce mixture into the pan and bring to a gentle simmer. Add the harder vegetables first (cauliflower, carrot, baby corn), then after 3 minutes the broccoli, snap peas and bell pepper. Nestle in the tofu puffs, cover, and simmer on low for 8-10 minutes until the vegetables are just tender.
  5. If the sauce is too thin, simmer uncovered briefly to thicken to a glaze. Taste and adjust with a little more soy sauce or coconut sugar. Serve hot over steamed rice, garnished with extra chili or crushed peanuts.
