Iced Soy Milk Udon Noodles — 冰豆乳烏龍麵

Ingredients
  

  • 1 portion Udon noodles 烏龍麵 2 servings total
  • 2 cups Soy milk 豆漿 Unsweetened, well chilled
  • 1/2 block Silky tofu 嫩豆腐 Blends into the broth
  • 1 block Frozen tofu 凍豆腐 Thawed, pressed, for the 素肉燥
  • 1 Cucumber 小黃瓜 Julienned
  • 1 tbsp Peanut butter 花生醬 Smooth, natural
  • 2 tbsp Soy sauce 醬油 For the braised topping
  • 1 tbsp Mirin 味醂 Adds sweetness
  • to taste Salt 鹽巴 Seasoning
  • to taste Chili oil 辣椒油 Drizzle, optional

Method
 

Step 1 — Make the broth
  1. In a blender, combine soy milk, silky tofu, peanut butter, and a pinch of salt. Blend until completely smooth and creamy.
  2. Chill the broth in the fridge or over ice until cold.
Step 2 — Prepare the topping
  1. Thaw and press frozen tofu to remove excess water, then crumble or chop finely.
  2. Heat a pan with a little oil and fry the tofu until golden and slightly crisp. Add soy sauce, mirin, and a splash of water; simmer until reduced into a savory coating.
Step 3 — Cook the noodles
  1. Cook udon according to package directions until just tender.
  2. Drain and rinse under cold water to stop cooking. Chill the noodles in ice water, then drain well.
Step 4 — Assemble the bowl
  1. Place chilled udon in a bowl and pour the cold soy milk broth over it.
  2. Top with julienned cucumber and the braised frozen tofu. Drizzle with chili oil and serve immediately.

Notes

A cold, creamy soy milk broth keeps this iced udon bowl light and refreshing. Chill everything thoroughly for the best texture.
