Corn Tempura — 玉米天婦羅

Ingredients
  

  • 1 can Canned corn (玉米罐頭) water drained
  • 2 tbsp Low-gluten flour (低筋麵粉) to bind kernels
  • 1/2 cup Tempura batter mix (酥炸粉/天婦羅粉) or all-purpose tempura flour
  • 1/3 cup Ice water (冰塊水) key for crisp coating
  • a pinch Salt (鹽巴)
  • to cover Frying oil (油) high smoke point
  • to taste Pepper salt (胡椒鹽) classic finish
  • optional Dipping sauce (沾醬) ketchup + vegan mayo + mustard seeds

Method
 

  1. Drain the canned corn completely. Add a little low-gluten flour and a pinch of salt to the drained corn.
  2. Add tempura flour to a bowl and stir in ice-cold water a little at a time until smooth. Ice water keeps the coating shatter-crisp.
  3. Fold the batter into the seasoned corn until every kernel is evenly coated in a thin layer.
  4. Heat oil in a pan to about 170°C (350°F). Test with a wooden chopstick — when dense bubbles form around it, it's ready.
  5. Spoon the battered corn in small portions into the oil. Use a shallow half-fry method at home to save oil. Fry until the batter is golden and crisp — the corn is already cooked.
  6. Cook until the pieces feel firm when lifted and turn golden brown, with slightly toasted corn edges. Drain, sprinkle with pepper salt, and serve.
