Chinese Stir-Fried Broccoli (蒜蓉炒西兰花)

Ingredients
  

  • 500 g Broccoli 西兰花 cut into florets, stem peeled and sliced
  • few slices Carrot 胡萝卜 optional, for colour
  • 1 tbsp Garlic 蒜 minced
  • 1 tsp Ginger 姜 minced
  • 1 tsp Vegan oyster sauce 素蚝油 mushroom stir-fry sauce
  • ½ tsp Salt 盐
  • 1 tsp Sugar 糖
  • 1 tsp Nutritional yeast 营养酵母
  • 2 tsp Potato starch 土豆淀粉 for glaze
  • 1 tbsp Cooking wine 料酒
  • 2 tbsp Water 水 for sauce
  • 1 tbsp Cooking oil 食油 for stir-frying
  • 1 tsp Sesame oil 芝麻油 to finish

Method
 

  1. Soak broccoli in cold water with a pinch of salt and baking soda for 5 minutes, then rinse well.
  2. Cut florets off from the outermost bud, cutting down along the stem. Separate by hand, then peel and slice the thick stem.
  3. Boil water with salt and oil. Blanch broccoli ~3 minutes, then shock in ice water for 1 minute and drain.
  4. Combine vegan oyster sauce, salt, sugar, nutritional yeast, potato starch, cooking wine, and water.
  5. Heat oil over medium heat, sauté garlic and ginger 15-20 seconds. Turn to high, add broccoli and carrot, stir-fry 40-50 seconds.
  6. Add the sauce in batches, stir-fry ~1½ minutes until glossy. Drizzle with sesame oil and serve.

Notes

For the brightest green, do not skip the ice-water shock after blanching.
