Avocado Tofu Sandwich — 酪梨豆腐三明治

Ingredients
  

  • 1 whole Ripe avocado 酪梨 mashed
  • 200 g Firm tofu 板豆腐 pat dry, crumbled
  • 1/2 Apple 蘋果 diced
  • 1/2 Cucumber 小黃瓜 sliced, squeezed dry
  • 1/2 piece Lemon 檸檬 juice
  • 2 tbsp Sweet corn 玉米
  • 4 slices Bread 吐司 toasted
  • 1 tbsp Seaweed paste 海苔醬 the secret egg flavor
  • 1 tbsp Yellow mustard 黃芥末
  • 2 tbsp Vegan mayonnaise 純素美乃滋
  • 1 tsp Soy sauce 醬油
  • 1 tsp Maple syrup 楓糖漿
  • 1 pinch Salt 鹽 for cucumber

Method
 

  1. Trim the cucumber ends and slice into thin rounds. Toss with a pinch of salt, rest a few minutes, then squeeze out excess water by hand.
  2. Pat the firm tofu dry with a paper towel. Crumble it into a large bowl, keeping some texture. Finely dice the apple.
  3. Add the ripe avocado to the crumbled tofu and mash together until creamy but still structured.
  4. Stir in the lemon juice, diced apple, drained cucumber, and sweet corn kernels.
  5. Season with soy sauce, maple syrup, yellow mustard, vegan mayonnaise, and seaweed paste. Stir until evenly combined.
  6. Spread the salad over toasted bread, top with a second slice, cut diagonally, and serve. Save extra salad to toss through cold rolled pasta.

Notes

Squeeze the cucumber really dry so the salad stays thick. The seaweed paste + mustard combo is what makes it taste like egg salad.
