蜜汁蓮藕 Honey Glazed Lotus Root

Ingredients
  

  • 1 pc Lotus root 蓮藕 about 250 g, peeled, sliced thin
  • ½ pc Zucchini 櫛瓜 sliced slightly thicker
  • 2–3 tbsp Sweet potato starch 地瓜粉 for dusting before frying
  • as needed Neutral frying oil 食用油 for shallow frying
  • 2 tbsp Soy sauce 醬油 for the glaze
  • 2 tbsp Honey 蜂蜜 plus more to taste
  • 1 tsp White sugar 白糖 balances the salt
  • ½ tsp White pepper 胡椒粉 gentle warmth
  • 1 tbsp Sesame seeds 芝麻 toasted, for aroma
  • 30 ml Water 水 loosens the glaze if too salty

Method
 

  1. Scrub and peel the lotus root, trim both ends, and slice into thin rounds. Slice the zucchini into slightly thicker rounds as it shrinks more.
  2. Dust the lotus root with sweet potato starch until evenly coated. Deep-fry in batches in hot oil until golden and crisp, flipping when pieces float and feel light. Finish the last batch on high heat for about 1 minute. Fry the zucchini for about 1 minute, then drain.
  3. Return about 2 tbsp of frying oil to the pan. Stir in 2 tbsp soy sauce, ½ tsp white pepper, 1 tbsp sesame seeds, and 2 tbsp honey. Add 30 ml water and about 1 tsp white sugar, then bring to a lively boil over high heat.
  4. Add all the fried lotus root and zucchini, tossing constantly until the glaze coats each slice and reduces to a glossy, thick syrup. Serve hot over rice.

Notes

If the glaze tastes too salty, loosen it with 30 ml water and a little extra sugar. Fry in small batches to keep the lotus root crisp.
